Our Signature Sushi Rice

At Kokoro Don Café, we prepare our sushi rice with a special Sake-less Vinegar crafted in the traditional Japanese style. This premium vinegar is made without sake, allowing the pure, clean aroma of the rice to shine while adding a delicate depth of flavor that is both elegant and beautifully balanced.


Our vinegar is imported directly from Japan, produced by artisans who have perfected the craft over generations. Its gentle acidity and naturally fragrant profile create sushi rice that is light, smooth, and exceptionally refined—a true expression of Japanese culinary precision.
